Homemade Lasagne

Ingredients

Serve 6 – 8 persons

1kg Massey’s Lean Steak mince
4 Slices Massey’s Maple cure bacon diced small
1 Large onion finely chopped & sliced
3 – 4 Cloves Garlic Crushed or finely sliced
1 Punnet Mushrooms or mixed peppers sliced or diced (optional)
Cooking or Rapeseed Oil
2 – 3 Spoonful Balsamic vinegar / glaze
1 x 450g tin of Chopped Tomatoes
1 x 400ml Tomato Passata
1 x 1 Ltr Full fat Milk
200g Grated Cheddar Cheese
1 Beef Stock cube or gel pot
1 – 2 pints of freshly boiled hot water
Rock Salt and Black Pepper to season
Freshly chopped or dried mixed herbs / oregano
50g Plain Flour
50 – 100g unsalted butter
1 – 2 packets Pasta sheets

Method

Heat pan until visibly hot with a little oil.
Add finely chopped & sliced onion, bacon and (mushrooms or peppers optional)
stirring gently every 30 seconds for approximately 3 – 4 minutes.
Add mince steak into pan with bacon & onions and stir until mince is lightly browned on a medium heat
Add garlic, balsamic glaze, chopped tomatoes, passatta, water dissolved stock cube, herbs and 25g of butter, simmer on medium heat for 30 – 40 minutes add more stock if ragu becomes to thick. Add salt and pepper to season if required

For Bechamel sauce. Add 1ltr milk to seperate pot and bring to a gentle bubbling heat, heat or warm remaining butter until soft but not melted in microwave and mix with plain flour until 2 combine. Place into warm milk and whisk on a gentle heat until bechamel sauce thickens.

Preheat Oven to 180 oC : Layer ragu alternatively in appropriately sized oven dish or dishes with pasta sheets, making sure last layer of pasta sheets leaves ample room for Bechamel sauce topped with grated cheese and herbs sprinkled on top.
Place in oven for 40 – 45 minutes or until top of lasagne is well coloured
Rest for 20 – 30 minutes before serving .

NB: This homemade Lasagne is great for serving on the day after it is made. To reheat, cover with foil, place in preheated oven at 180 oC for approximately 45 minutes or until visibly hot the whole way through

Serve with baked potato, wedges or garlic bread, fresh creamy Coleslaw, cherry tomatoes or other salads of your choice
