Fantastic with Orange, Cherry or Plum sauce.

Simply fry in hot pan for 10 -15 minutes. Chefs tip: Season well, then fry in hot pan starting fat side down until well caramelised (approx 5mins). Turn fillet over onto flesh side for a further 3 - 5 mins and rest for 5 mins on a warm plate. Add 1/2 a pint of fresh orange juice into pan, 2 teaspoons of marmalade, and simmer for 5 - 10 minutes, add cornflour to thicken, seasoning and a knob of butter.
